Thai Larb Recipe

500g extra lean pork mince Coles

54g shallots diced

20g garlic minced

100g red onion sliced

70g fresh mint (1 bunch)

50g coriander (1 bunch) 

30g green onion (few sprigs)

40g Fish sauce (to taste)

50g lime juice (to taste) 

Chilli to taste

20g ground toasted sticky rice

      1.    Cook mince in water (not oil) 

      2.    Add shallots and garlic cook add chilli flakes to taste

      3.    Separate bowl add mint, coriander, red onion, green onion and ground sticky rice. 

      4.    Combined pork mixture to the fresh herbs and toss. Add fish sauce and lime juice to taste. Final toss.

      5.    Serve with iceberg lettuce. Enjoy your larb!

Go crazy with the fresh herbs.

Other serving options is jasmine rice with cucumber on the side or cos lettuce. Remember some serving options can add calories.
